Creamy Marinara Pasta with Guacamole
Creamy Marinara Pasta
Ingredients:
- 1 pound (450g) penne pasta
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/2 cup heavy cream (or half-and-half)
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt and pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions:
- Cook the pasta al dente. Reserve 1 cup pasta water.
- Sauté onion and garlic until fragrant.
- Add crushed tomatoes, oregano, and basil. Simmer for 15-20 minutes.
- Stir in cream and Parmesan. Season.
- Add pasta to sauce, use pasta water to loosen if needed.
- Serve, topped with extra Parmesan and basil.
Guacamole
Ingredients:
- 2 ripe avocados
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped cilantro
- 1-2 tablespoons lime juice
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Optional: 1 small jalapeño, seeded and chopped
Instructions:
- Mash avocados in a bowl.
- Add onion, cilantro, lime juice, salt, pepper, and jalapeño (if using).
- Mix well and adjust seasoning to taste.
- Serve immediately or store with plastic wrap pressed on top.
Serving Suggestion: Place a generous scoop of guacamole on top of each serving of pasta.
